Gluten free Fruit Muffins 1 cup buckwheat flour 2 Tbsp brown sugar 1 tsp mixed spice 1 egg 1 tsp baking soda 1.1/2 cups milk 1 cup rice flour 3/4 cup mixed fruit 2 tsp cream of tartar Into a bowl mix flours, sugar, spice, c of t and b/soda. Mix milk and egg and ad d fruit, add dry ingredients and mix until just combined. 3/4 fill greased muffin pans and bake 350F for 10-15 mins. Pizza dough recipe* Here's a pizza dough recipe I use which yields a thinner, less doughy crust, usually. The ingredients are as follows: 4 cups of flour 1 tbsp of sugar 1 package of yeast (approx. one tbsp) 1 cup of water 1/4 cup of oil First mix the dry ingredients together. Next, heat up the water and oil in the microwave for about 1 minute (warm to the touch). Now, add it to the dry ingredients. Knead it and put in a greased bowl and allow it to rise, preferably on a warm surface (i.e. on top of the oven as it is being pre- heated). Italian Pizza Crust Makes 1 or 2 crusts depending on how thick you like your crust 1 Tbsp yeast 1/4 tsp sugar 1/2 cup + 2 Tbsp lukewarm water 1 cup flour 1 tsp salt Mix together the yeast, sugar and 2 Tbsp of water. Sift the flour and salt into a bowl. Add the frothing yeast and the remaining water and mix to make a smooth dough. Knead for 10 minutes of until elastic. Leave to rise for 1 hour or until almost doubled in bulk. Note: You can make this recipe in breadmaker, but I've found that you have to omit the additional 2 Tbsp of water. PIZZA CRUST 1/2 cup Warm Water 1 tsp. Sugar 1 cup Cold Water (or 3/4 cup*) 1 pkg. Yeast 1-1/2 tbs. Sugar (or 1-1/2 tsp.*) 3-1/2 cups Flour (or 3 cups*) 1-1/2 cups Corn Meal, white (or 1 cup Pasta Flour*) 1-1/2 tsp. Salt (or 3/4 tsp.*) 1/3 cup Olive Oil (*) Use these ingredients and quantities for Sicilian Style Dough Mix the warm water, 1 tsp. sugar and yeast and let stand for 5 minutes; in a food processor fit steel or plastic dough blade; to the work bowl add the remaining sugar, flour, corn meal (or pasta flour) and salt; turn the machine on and off to mix the ingredients; with the machine running, slowly add the olive oil and the yeast mixture; with the machine continuing to run, slowly add the cold water until the dough forms a ball; continue to process the dough for about one minute or until kneaded; remove dough from work bowl and knead it by hand in a ball; place dough in a lightly oiled bowl and place in warm place to rise; let rise for 45-60 minutes; remove from bowl and punch down; return to bowl for second rise, 30-45 minutes. Stretch or roll the dough to form a pizza crust 14-16 inches in diameter. Top with ingredients and bake at 400 degrees 15-20 minutes. Makes one Pizza. Cinnamon Rolls 2 cup milk, scalded 2 pkg. dry yeast (2 tbsp.) 1 cup sugar 2 eggs 1/2 cup margarine, melted 6 1/2 to 7 cup flour 1/2 cup margarine 1/2 cup sugar 1/4 cup ground cinnamon Glaze: 4 cup powdered sugar 1 tsp. vanilla 1/2 cup water Cool the scalded milk to lukewarm. Add yeast, 1/2 cup sugar, and 2 cups flour to make a sponge. Cover. Let rise 30 minutes. Add remaining sugar, eggs, margarine, and remaining flour. Knead 5 to 10 minutes until smooth and elastic. Place in greased Dutch oven and turn greased side up. Cover. Let rise until doubled in bulk. Punch down dough. Roll out on floured surface until about 1/2-inch thick or less. Will make rectangle approximately 12 x 24-inch. Spread 1/2 cup softened margarine over entire surface of dough. Sprinkle sugar and cinnamon evenly over margarine. Roll tighly from long side. Cut into 24 pinwheels. Place in greased baking pan. Let rise until doubled. Bake at 350° for 25-30 minutes. When done, remove from oven. Mix ingredients for glaze. Beat until smooth. Spoon over rolls. Serve warm or refrigerate when cooled for later. Cinnamon Rolls Grandma's Cinnamon Rolls for Breadmachine 1 1/4 cups Water 3 cups flour 2 Tbsp. Dry Milk 3 Tbsp. Sugar 1 tsp. salt 3 Tbsp. Butter 2 tsp. Yeast Combine ingredients in bread machine and put through the entire dough cycle. Remove and roll out onto a flour surface in a rectangle shape. Melt 1/2 cup butter and pour enough of the melted butter into two pie plates enough to cover the bottom. Spread the rest of the melted butter onto the dough. Sprinkle brown sugar in each pie plate and over dough. Sprinkle cinnamon over dough. Roll up the dough length wise to make a long rope. Cut into 1 inch slices and place in pie plates. Cover and let rise about 2 hours. Bake in 350 degree oven till golden brown on top. Remove from oven and immediately invert pie plate on a sheet of wax paper. Cool. Serve warm with butter. Freezes very well. CINNAMON ROLLS INGREDIENTS: 2 pkgs dry yeast 5 cups flour 2 1/2 cups lukewarm water 1 package yellow cake mix with or without pudding 1 tablespoon sugar pinch salt INSTRUCTIONS: In large bowl, dissolve yeast in lukewarm water. Add remaining ingredients, stirring well, by hand. Knead for several minutes, you will probably have to use a little extra flour. Let dough rise in warm place until doubled in bulk. After dough rises, divide it into 3 portions. Roll each portion into a rectangular shape, about 1/4 to 1/2 inch thick. Filling: butter, sugar, and cinnamon. I'm not putting down amounts as that is up to you just how rich you want your rolls. Spread on the butter then sprinkle on the sugar and then the cinnamon. Roll each into a log shape, starting at longest side. Pinch dough together to form seam. Cut each roll into 12 pieces. Place about 1 inch apart on well greased pans. You can use your cookie sheets for this as long as it has sides. Let rise until about double. Bake in 350 degree oven about 20 minutes. Don't over bake. Make a glaze of powdered sugar and hot water or use your favorite glaze.*
