If you have a camp stove and a pan (or two), you can eat really well with a few staple foods.Here's my favorite camping dish from last season. Tasty Rice and Beans * 1 cup quick-cooking brown rice 1-2 Tbs. olive oil 1 small onion 8-10 fresh mushrooms, sliced Salt, pepper 1 tsp. cumin 8 oz. tofu, diced 1 can of pinto or adzuki beans (15 oz.) If you have only one pot, cook the rice first, following instructions on box. Transfer rice to a covered bowl or container to keep warm. Heat oil over medium/high flame. Saute onion until soft, about 5 minutes. Add mushrooms and saute until they release their juices, another 5-10 minutes. Add salt and pepper to taste, and cumin. Continue cooking for another 2 minutes. Add tofu and saute another 5 minutes. Add beans WITH liquid and cook until liquid begins to reduce and texture is thick enough for your taste. Serve over rice, with a salad of lettuce and tomato, or any other raw vegetables you have.
