Apple Raisin Cake * 1 3/4 cups apples -- coarsely chopped 3 teaspoons brown sugar substitute 1/4 cup oil -- polyunsaturated 2 egg white -- beaten with fork 1/2 teaspoon baking soda 1 teaspoon baking powder 1 1/2 cups flour 1 teaspoon cinnamon 1/2 teaspoon nutmeg 1/2 cup raisins -- soaked in warm water Preheat oven to 350 F. Mix apples and brown sugar substitute in bowl. Add oil and beaten egg whites. In separate bowl, combine dry ingredients. Add to batter and mix well to form a stiff dough. Add plumped raisins. Stir to blend. Spread in 8-inch square cake pan. Bake 40 minutes or until top springs back when touched.
